The boutique distillery’s history began with an appreciation of the pristine natural environment here in Tasmania. The distillery’s founder, Bill Lark, saw the potential in the pure water, highland peat bogs, windswept fields of barley and temperate climate for which Tasmania is renowned and began distilling in 1992, approximately 150 years after the last Tasmanian distillery closed its doors.
Stroll down to Lark Distillery’s headquarters on the historic dockside of Franklin Wharf. Visit the distillery’s cellar door and take in its warm-timbered interiors and enviable top shelf. At the whisky bar, chat to the helpful bar staff and select from more than 150 premium spirits. Sample Lark’s flagship single malt whisky or taste the delicate flavors of a gin spiced with Tasmanian mountain pepper. Tasmanian beer, wine and cider is also available, as well as coffee and platters of local cheeses.
